Wholesome little muffins baked with brown rice and parsley, designed as a light, fiber-rich snack that also freshens breath.
Ingredients
- ½ cup cooked brown rice (soft, plain)
- 2 tbsp oat flour
- 1 tbsp parsley (finely chopped)
- 1 tsp olive oil
Method
- Mash brown rice slightly and mix with oat flour, parsley, and olive oil.
- Spoon into mini silicone muffin molds.
- Bake at 170°C (340°F) for 12–15 minutes.
- Cool before serving.
